Vatapa is is a Brazilian dish made from the ingredients of shrimp, bread, coconut milk, finely ground peanuts and palm oil combined into a creamy paste.

It is a dish very common in Northern and Northeastern regions of Brazil.

Ingredients List:

  • 3 Cloves Garlic, Chopped
  • 2 Medium Onions, Chopped
  • 1 Cup Coconut Milk
  • 3 Cups Fish Stock
  • 3 TBSP Oil
  • 1/4 Cup Cashews, Ground
  • 1/4 Cup Plain Peanuts, Ground
  • 6 oz Dried Cod, Shredded
  • 1/2 Cup Dried Shrimp, Ground
  • 1 TBSP Grated Ginger
  • 1 Day Old French Bread
  • 1 Cup Dende Oil
  • 1/2 lb Raw Shrimp, Peeled and Deveined
  • Salt & Pepper to Taste

Preparation:

Tear the bread into pieces and put in a large mixing bowl. Pour the coconut milk over the bread and let soak until the bread is soft. Once soft, mix in a food processor. Set aside.

In a large saucepan heat the dendê oil. Add the garlic, onions and whole shrimp and cook until the onions are transparent. Add the ground cashews, peanuts and ground shrimp, stir to mix all the ingredients. Add salt and pepper to taste.

Add in the bread mixture, stir until combined.

Add the cod and fish stock. Continue to cook on low heat, stirring to prevent sticking, until the sauce is reduced and thickened.

Remove from heat and stir in the grated ginger. Pour into a large serving dish and serve with rice.
