Tembleque is a coconut dessert pudding very popular in Puerto Rico. It's main ingredients include coconut milk, sugar and cinnamon.

The word tembleque translated into english mean trembling which describes the jello like texture of the dish.

Ingredients List:

  • 1/2 Cup Cornstarch
  • 3/4 Cup Sugar
  • 1/2 tsp Salt
  • 28 oz Coconut Milk
  • Toasted Coconut
  • Ground Cinnamon

Preparation:

Combine all ingredients except cinnamon and toasted coconut in medium saucepan and whisk well. Place over medium high heat. Bring to a boil while stirring constantly. Cook until it is smooth and thick, about 5 minutes.

Pour the coconut pudding into six 4 oz ramekins. Cover with plastic wrap and refrigerate until firm, at least 3 hours or overnight.

Enjoy in the ramekin or to unmold, run a thin knife around edge. Invert mold onto serving plate. Sprinkle with coconut and cinnamon.
