Quipe Recipe | Receta Quipe

Quipe is a tasty Dominican dish.

Quipe or Kipes, has its roots in the Middle East, when Lebanese immigrants arrived to the Dominican in the 18th century.

Quipes are essentially fried Dominican wheat fritters stuffed with ground beef. A delicious Dominican snack that can be enjoyed anytime of day.

A quipe recipe is not hard just a little time consuming.



Ingredients List:

  • 1 Cup Fine Bulgur Wheat
  • 1/3 lb Ground Beef
  • 2/3 lb of Picadillo
  • 1 Medium Onion
  • Salt & Pepper to Taste
  • 1 Basil Leaf
  • 1/2 Cup Tomato Sauce
  • 1/4 Cup Raisins
  • 1 Cup Mint Leaves, Chopped
  • Oil for Frying
  • Preparation:

    Put the wheat in a bowl and add 3 cups of water, cover and let it sit for 4 hours. Stir a couple of times while it rests. Drain the bulgur and transfer to large bowl.

    Add onion, mint and basil to a food processor and pulse until it becomes a coarse paste.

    Add half of your wheat to the paste in the food processor and process until a soft dough forms.

    In a large bowl, mix the rest of the wheat and the soft dough mixture. Add 1/3 pound of ground beef. Season with salt and pepper. Using your hands, mix the 1/3 pound of meat with the wheat mixture until it’s well incorporated.

    Take a large tablespoon scoop of the bulgur mixture and squeeze to compact in the palm of hands. Using the back of a spoon, press down on the bulgur mixture to make an oval shape hole. Add 2 teaspoons of the picadillo to the center of the oval. Close the opening of the quipe and form into a football shape. Make sure to enclose filling completely to prevent splattering when frying.

    Transfer quipe to baking sheet. Repeat with remaining bulgur and beef mixture. Chill in refrigerator until firm, about 1 hour.

    Heat oil in deep pot until hot, 350°F. Fry quipes in batches until golden brown, about 3 minutes. Transfer to a paper towel lined tray to drain. Serve warm.
