Empanadas de Viento Recipe | Receta Empanadas de Viento

Empanadas de Viento is a typical Ecuadorian street food.

Viento means air or wind and it refers to the lack of filling used in the Ecuadorian empanada.

Empanadas de Viento recipe uses cheese (but not vey much) as the filling and sprinkles sugar on the outside.

Ingredients List:

  • 2 Cups Monterey Jack or Mozzarella Cheese, Shredded
  • 1/2 Cup White Onion, Minced
  • 1/2 Cup Sugar
  • Vegetable Oil for Frying
  • 15 Medium Size Empanada Discs

Preparation:

Melt the butter in a small skillet and add the minced onion. Cook over medium heat until the onion is translucent. Set aside to cool.

When it has cooled, place the onion with the shredded cheese in a bowl and toss to combine.

Spoon the cheese filling on the center of the each empanada disc.

Brush the edges of the disc of dough lightly with water. Fold the circle of dough in half and seal the edges together firmly. Repeat with remaining discs.

Chill the empanadas, this will help them seal better and prevent leaks.

Heat several inches of vegetable oil in a deep skillet over medium-high heat. Fry each empanada until they are golden on each side.

Carefully remove the empanadas from the oil with a slotted spoon, spatula, or tongs, and place them on a plate lined with paper towels.

Sprinkle the tops of the empanadas with a generous amount of sugar while they are still hot.

Serve warm.
