Changua is a classic Colombian breakfast soup dish.

It's recipe includes milk and poached egg as it's main ingredients. Changua is especially popular in the capitol of Bogota, Colombia.

Ingredients List:

  • 2 Cup Water
  • 6 Green Scallions, Chopped
  • 4 Eggs
  • 4 Cups Milk
  • 4 Slices White Bread, Toasted & Diced
  • 4 TBSP Cilantro, Chopped
  • Salt & Pepper to Taste
  • Preparation:

    Place the milk and water in a medium sized pot and bring to a boil.

    Add the onion, salt and pepper and cook for 3 minutes. Reduce the heat to medium and add the eggs without breaking them.

    Let the eggs cook for 3 minutes and add the cilantro.

    Serve warm with toasted bread and garnish with cilantro.
