Ingredients List:

  • 4 Chicken Breasts
  • 1 TBSP Ground Coriander
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/8 tsp Sea Salt
  • Black Pepper to Taste
  • 1 TBSP Olive Oil
  • 2 Ripe Plantains, Peeled and Cut into 1/4" Pieces
  • 1 Cup Canola Oil
  • 1 Small Head of Iceberg Lettuce, Shredded
  • 1 Tomato, Sliced
  • 1 Carrot, Grated
  • Vinaigrette
  • 3 Cups White Rice, Cooked
  • 2 Cups Black Beans, Cooked
  • 4 Eggs, Fried
  • 1 Cup Queso Fresco, Sliced
  • Tortillas
  • Pico de Gallo and Avocado, Optional

Preparation:

In a small bowl blend spices together. In a large skillet, heat olive oil over medium heat. Sprinkle both sides of chicken breasts with spice blend. Cook on each side for 4 minutes or until cooked through.

In a large skillet pour about 1" of canola oil. Heat oil over high heat. Place plantain sections in oil and cook until golden brown. Remove from oil and drain on a paper towel lined plate.

Prepare the salad by combining the lettuce, grated carrot and tomato slices. Season with salt, pepper and vinaigrette, set aside.

Lastly, cook the eggs.

When everything is ready to serve each plate will get one chicken breast, with a serving of fried plantains to the side, followed by salad, rice, beans, one fried egg and some slices of queso fresco.

Serve with pico de gallo and avocado slices. Have tortillas warmed up in the oven ahead of time, and place them on a separate platter.

Serve immediately with a cup of Costa Rican coffee or ice cold beer.
