Bolon de Verde is a traditional Ecuadorian breakfast or side dish.

Bolon means large ball and verde means green. They are essentially green plantain dumplings usually stuffed with cheese and either chicharron or chorizo.

Bolon de verde is typically eaten with fried eggs, hot sauce and some coffee.

Ingredients List:

  • 4 Green Plantains
  • 3/4 Cup Queso Fresco
  • Salt to Taste
  • Oil for Frying

Preparation:

Peel and chop the plantains. Place plantains in pot and cover with water. Boil until soft.

Drain the plantains. In a large bowl mash the plantains. Season with salt.

Crumble in cheese and mold into balls about the size of a small tomato.

Heat vegetable oil in a pan. Cook the plantain balls until they are golden browned on all sides.

Remove from oil and place on a paper towel lined plate.

Delicious served with a fried egg and aji on the side.
