- 1 lb Dry Beans, Soaked Overnight
- 1 Red Onion, Diced
- 6 Garlic Cloves, Crushed
- 1 Cup Tomatoes, Peeled & Diced
- 1/2 tsp Achiote
- 1 tsp Cumin Seeds, Whole
- 1 tsp Cumin
- 1 tsp Chili Powder
- 3 TBSP Oil
- 3 tbs Cilantro, Finely Chopped
- Salt & Pepper to Taste
Heat the oil in a saucepan over medium heat. Add onions and garlic, let cook for about 3 minutes.
Add the tomatoes, achiote, cumin seeds, ground cumin, chili powder, salt and pepper. Cook for 5 minutes.
Add water and bring to a boil.
Add the soaked beans and simmer until tender, about 2 hours.
Add salt to taste.
Mix in the cilantro.
Serve with rice, fried plantains, salad, meat, avocado and some aji or hot sauce on the side.
