Pebre is a popular and spicy Chilean condiment found on dinner and restaurant tables throughout Chile.
It is used in a wide variety of Chilean meals, like chimichurri in Argentina or ketchup in America.
A pebre recipe typically includes ingredients like coriander, onion, olive oil, garlic and ground aji peppers.
- 1/2 Cup Cilantro, Chopped
- 1 Large Onion, Chopped
- 4 Cloves Garlic, Minced
- 3 TBSP Red Chili Pepper Paste
- 2 TBSP Olive Oil
- 1 TBSP Red Wine Vinegar
- Lime Juice
- Salt & Pepper to Taste
Put onion, garlic and cilantro into a bowl.
Stir the red chili pepper paste into onion and garlic mixture. Add the olive oil and red wine vinegar. Mix well.
Season with salt and pepper and add lime juice to taste.
Mix everything together, cover, and store in the refrigerator for a few hours to let all of the flavors blend. It will taste spicier the day after you make it.
