Xinxim de Galinha is a typical recipe from the Bahian region of Brazil.
Xinxim de Galinha is a delicious chicken with shrimp and peanut Brazilian dish.
The recipe's use of azeite dende (Palm Oil) gives this dish an unusual yet authentic Brazilian taste.
This Xinxim de Galinha recipe will serve 6.
- 3 pound chicken, cut into serving pieces
- 2 cloves garlic, crushed
- 2 tablespoons olive oil
- 4 tablespoons lemon or lime juice
- 1 medium onion, grated
- 1 cup dried shrimp, finely ground
- 1/4 cup dende oil
- 1/2 cup chicken stock
- 1/2 cup dry roasted peanuts, ground
- 1 fresh hot red pepper, seeded and chopped
Use the lime or lemon juice, garlic, and salt to season the chicken. In a heavy saucepan heat the oil and saute the onion, dried shrimp, peanuts, and hot pepper for 5 minutes, stirring occasionally.
Add the chicken pieces and their juice, and cook for a few minutes, turning the pieces over once.
Add the chicken stock, cover, and simmer gently until the chicken is tender, approximately 30 minutes, turning once during the cooking and adding a little more stock if needed.
When the chicken is tender, taste for seasoning, pour in the dende oil, and cook for a minute or two longer. The sauce should be thick.
Serve with white rice and farofa de dende (Cassava Meal with Palm Oil).
