Arroz con Pollo Recipe | Receta Arroz con Pollo

Below is a typical and traditional version of Colombian Arroz con pollo recipe which we believe is as good as you will find anywhere.

Ingredients List:

  • 4 Chicken Breasts, Cooked & Chopped in Small Pieces
  • 3 TBSP Vegetable Oil
  • 1 Large Red Pepper, Chopped
  • 1 Large Green Pepper, Chopped
  • 1 Large Yellow Pepper, Chopped
  • 1 Medium Onion, Chopped
  • 1 Garlic Clove, Minced
  • 5 Cups of Water
  • 3 Cups of Rice
  • 2 Cups of Mixed Vegetables, Carrots, Peas, Green Beans and Yellow Corn
  • 1 Chicken Bouillon Cube
  • 1/2 TBSP Sazon with Saffron
  • Salt & Pepper to Taste
  • Preparation:

    Heat oil in a large pot over low heat. Add the onions, peppers and garlic. Cook until the onions are translucent, about 4 to 5 minutes.

    Add rice and stir everything well.

    Add 5 cups of water, the mixed vegetables, chicken breast, bouillon, sazon and salt. Bring to a boil. Reduce the heat to low. Once rice has absorbed all the water, cover the pot and cook on low heat for 10 to 15 minutes until the rice is soft. Mix well with a fork, cover and cook for 5 minutes more.

    Serve in large bowls.
