Arroz con Coco Recipe | Receta Arroz con Coco

Arroz con Coco is Colombian rice with coconut dish. It is quite popular especially along the coast where it is normally served as a side dish with seafood.

Sometimes the arroz con coco recipe will use raisins as one of its ingredients to add another layer of flavor.

The recipe can take some time but is is definitely worth it in the end.



Ingredients List:

  • 14 oz Coconut Milk
  • 2 Cups Long Grain Rice
  • 3 Cups Water
  • 1 tsp Salt
  • 1/2 Cup Raisins
  • 3 TBSP Sugar
  • Preparation:

    In a wide saucepan, heat the coconut milk until simmering. Reduce the heat to medium low and simmer, stirring frequently with a spoon until reduced to a couple of tablespoons. Continue to cook, stirring and scraping constantly until it turns into a deep, golden brown paste, about 30 minutes total.

    Once you have a golden brown coconut paste, add the rice, sugar, and salt. Turn the heat to medium high and continue to cook until the rice grains begin to turn golden brown, 3-4 minutes. Add raisins and stir.

    Remove pan from the heat and add water, stir to combine. Return the pan to the heat and bring the mixture to a simmer over high heat. Reduce heat to lowest possible setting, cover, and cook for 15 minutes. Remove the rice from heat and let rest covered for 15 minutes longer. Fluff with a fork, and serve.
