Chicha Morada

Chicha Morada is Peru's most popular non-alcoholic drink. It's enjoyed throughout the year but particularly during the summer months. It's purple color comes from the Peruvian purple corn, also known as maiz morado, grown in the Andes mountains from which it's made.

The origin of chicha morada can be traced back to the Inca Empire.

Ingredients Needed

1 lb. Dried Peruvian Purple Corn or
Maiz Morado
20 Cups of Water 3 Sticks of Cinnamon
1 Pineapple Peel 2.5 oz. of Dried Cherries 2 Teaspoons of Whole Cloves
1/2 Cup Finely Peeled Apple 1 Cup Sugar 2 Tablespoons Key Lime Juice

Preparation

In a large pot, bring water, purple corn, cinnamon sticks, pineapple peel, dried cherries, and cloves to a boil. Boil for one hour. Strain the liquid, and discard the the corn cob, fruits and whole spices. Add diced fruit to the liquid when cool. Add ice and serve chilled.
